Pisang Goreng Kremes

Bahan :
[–] 1 sisir (10 buah) pisang uli
[–] 1½ lt minyak goreng.

Bahan Pencelup :
[–] 125 tepung terigu protein sedang
[–] ¼ sdt garam
[–] 250 ml air
[–] 1 sdm tepung beras
[–] 1½ sdm gula tepung

Bahan Kremesan :
[–] 1 lt air
[–] 240 gr tepung beras
[–] 45 gr tepung sagu tani
[–] 1 sdm garam
[–] 20 gr gula merah, disisir halus
[–] 2 kuning telur
[–] pewarna kuning tua secukupnya (boleh tidak dipakai)

Cara membuat:
[–] Potong pisang seperti kipas melebar. Sisihkan.
[–] Aduk bahan pencelup sampai rata.
[–] Aduk bahan kremesan sampai rata.
[–] Panaskan minyak goreng. Tuang satu sendok sayur adonan kremesan. Biarkan mengambang. Kecilkan api. Kumpul-kumpulkan adonan sehingga menyatu.
[–] Celup pisang ke bahan pencelup. Masukkan ke bagian tengah kremesan yang sudah dikumpulkan. Lipat kremesan hingga menutupi pisang.
[–] Goreng sampai matang.

Tips :
[–] Menggoreng pisang kremes lebih baik menggunakan 2 penggorengan yang masing-masing diisi minyak panas.
[–] Penggorengan pertama digunakan untuk menuang bahan kremes hingga melipat adonan.
[–] Penggorengan kedua digunakan untuk mematangkannya.
[–] Pada saat menuang bahan kremesan minyak harus benar-benar panas agar bahan kremesan naik dan mengambang.
[–] Setelah bahan kremesan mengambang, kecilkan api agar bahan kremesan tidak cepat kering.
